Give-Away -Fudge Brownies

Giveaway Alert - A box of fudge brownies for the lucky winner! 

Hosting my first Give-away with a box of brownies up for grabs! All you need to do to participate is to submit a favourite Ramazan or Eid inspired recipe.


How to take part in the give-away:

here goes ...

Ingredients:

1kg Chicken (Boneless)
1/2kg Yoghurt
2 tablespoons tikka masala
2 tablespoons Behari Kabab Masala
1 pack cream
salt to taste
Oil half a cup


Mix the masalas in the yoghurt and make a paste of it. Add it to the chicken and marinate it for a good 2 to 3 hours. take a pan and add the oil to it, once hot mix in the chicken and cook it till the water dries out and you can see the oil. take it off the heat and mix the salt (to taste) and cream lightly on top of it.

Pizza bites:

250 gms chicken boneless cut in very small cubes (marinate in yogurt and chicken tikka masala)

Cheddar cheese or pizza cheese shredded as per requirement

2 medium capsicums cut into small cubes

2 tomatoes cut into small cubes

2 onions cut into small cubes

Pizza sauce

oregano to sprinkle

butter for greasing

Bread slices (large) 6-7

Cook the chicken separately without oil. It can also be smoked with coal for a bbq flavor. keep aside. Cut the bread slices into fours. Spread butter on one side and pizza sauce on the other. Line them on a oven tray butter side down. Now put the topping - chicken, capsicum, tomato, onion, cheese. Generously sprinkle cheese. Lastly sprinkle some oregano or crushed chili if you want. Bake on a medium temprature for 6-7 mins (keep checking). You can bake them for 2-3 mins with only the top grill once the slices are crisp and golden.

*phew* Hoping for the brownies now :P

DAHI PAAPRI CHAAT

Makes 2 platters

INGREDIENTS:
Mini Paapri - 12 to 14 **
Green Chutney - 1 tbsp. **
Sweet Date & Tamarind Chutney - 1 tbsp ** (Or substitute regular Sweet Tamarind Chutney)
Thick Curd - 1 cup
Boiled Potato - 1, roughly cubed
Onion - 1 chopped finely
Coriander leaves - 1 tbs,p chopped finely
Fine Seo - 3 tbsp
Chilli Powder - 1/2 tsp
Chat Masala Powder - 1 tsp
Salt - as required
Sugar - 1 tsp

**Recipes below

NOTE : Halve the above ingredients for each plate as the above measures make 2 platters of dahi paapri chaat.

METHOD:
1.Line paapri on a plate, then add potato cubes and onion on top.
2.Beat curd with sugar and salt.
3.Drizzle date & tamarind, and green chutneys, along with the beaten curd, on top of the paapri.
4.Sprinkle chaat masala and chili powder on top. Add seo and coriander leaves. If desired, add more curd.Enjoy:)
5. This recipe can be tweaked by adding ingredients (like boiled chickpeas, bean sprouts etc), or removing them to suit one's tastes.

Recipes for the components are as follows:

i.MINI-PAAPRI
(Makes around 30-35)

Ingredients
Maida/ All purpose flour - 1 cup
Ajwain Seeds- 1.5 tsp
Oil - 1 tbsp
Salt - to taste
Water - for kneading
Oil - for deep frying

Method:
1. Mix together flour, oil, ajwain and salt with very little water to form a smooth, but hard dough. Let it rest, covered, for ten minutes.
2. Roll out dough thinly. Prick all over with a fork to prevent the paapri from puffing up while frying.
3. Cut into small pieces, either with a round cookie cutter, or simply with a sharp knife into squares.
4. Deep-fry until light golden.
5. Store in an airtight container once completely cooled.

ii. SWEET DATE & TAMARIND CHUTNEY
Ingredients:

Dates - 10
Tamarind pulp - 1 tbsp
Sugar- 2 tbsp
Cumin powder - 1 tsp
Red Chilli Powder - 1 tsp
Salt- according to taste

Method:
1. Soak dates with a little water till softened. Take out pulp, removing seeds, but reserve the water.
2. Puree together the date and tamarind pulp with the reserved water until smooth.
3.Cook together the date and tamarind puree, along with the spices, till thick enough to coat the back of a spoon.
4. Taste and adjust spices as needed.

iii. GREEN CHUTNEY

Ingredients:

Coriander Leaves - 1/4 cup
Mint Leaves - 1/4 cup
Green Chillies - 1
Lemon juice - 1 tsp
Chat masala powder - 1/2 tsp
Salt - according to taste

Method:
1. Blend together all the ingredients with a little water to make to smooth, thick paste

Quiche:

Ingredients:

1 cup flour
1/4 cup butter
1 /2 cup water
250g boneless chicken cubes
1 tbsp soya sauce
1 tbsp hot sauce
1 tbsp vinegar
1 tsp chilli powder
1tsp crushed black pepper
1 tbsp ginger garlic paste
3 egg yolks
1 tbsp oil
3 green chillies
2 tbsp cream

Mix flour 1 cup and butter ¼ cup together. Take half cup water and knead it into a bread. take about 250 gm boneless chicken cubes and add 1tbsp soya sauce, 1tbsp hot sauce, 1 tbsp vinegar, 1 tsp chilli powder, 1 tsp black pepper crushed and 1 tbsp ginger garlic paste. Leave chicken for 1 hr and then cook it adding 1tbsp oil in a pan. Now, in a mixer take 3 eggs with yolk add 2 tbsp cream and blend. Add a few cubes of cooked chicken in the mixture and blend again. Now, add one tomato chopped, 3 green chillies chopped, 1 tsp salt, 1 tsp black pepper crushed and the remaining shredded chicken cubes into the mixture. Meanwhile, in a baking tray, spread the the bread as base and bake it for 10 min. Now, pour the chicken and egg mixture in it and bake it for 7 to 10 min. Delicious Quiche is ready to be served.

Lentil Kheer:

Ingredients:

1 tbsp Daal Mong
1 tbsp rice
1 kg milk
100 g khoya
3/4 cup sugar
1/2 cup powdered milk
1 tsp Kewra

Soak 1tbsp moong ki daal and 1 tbsp rice for 20 minutes and then blend it together. Boil 1 kg milk, add rice and lentil mixture, cook for 10 to 15 minutes, add powdered milk, mix well, add 3/4 cup sugar and 100 gm khoya, cook till kheer thickens. Remove and add cardamom powder and Kewra water. Garnish with almonds and pistachio,. serve chilled.

Khawe Se

Salan
250 gms cubed pieces of chicken
1 tsp ginger garlic paste
1-2 tsp red chilli powder
½ tsp turmeric powder
1tso coriander powder
1 tsp zeera powder
2 tbsp tomato paste/puree
2 medium sized onions browned
Salt to taste (1 tsp sparingly)

Method
In a separate pan fry the onions till brown (crush them). In another pan heat half cup oil add all masalas add the chicken, fry a bit (2-3 mins) add tomato paste then add crushed onions, add half cup water, let it cook. Oil should come to the top, do not let the masala dry.

Curry
Dissolve 1 sachet of coconut powder and 2 and a half tsp besan in 1 cup lukewarm water then pour in a deep pan and 2 more cups of water, put to boil add salt and check for thickness. If it is too runny then add a bit more besan (it should be thicker than milk and less than soup).

Boil spaghetti (1 or half packet)
Also prepare spring onions, crisps, cut lemon, ground red chillies
Before serving use the oil left in the salan to pour over the curry.

Assemble on plate: spaghetti, salan, curry and then the condiments.
